They take control beyond what's possible with thrust changes alone (what quadcopters use) and pre-empt the effects of wind gusts.
Bicopters can be completely streamlined and - since only their propellers tilt - remain completely level in forward flight.
This allows simpler, tighter camera installations - without view-obstructions like extra propellers - which of course helps the aircraft stay streamlined.
